This super easy sweet potato pie recipe starts with a buttery homemade crust. You must use FRESH sweet potatoes in order to taste the authenticity of a sweet southern recipe that will knock your socks off.
Homemade Sweet Potato Pie
Two Pie Crust Recipe Ingredients
- 4 cups all purpose flour
- 1 3/4 cups butter flavored Crisco
- 3 Tablespoons white sugar
- 2 teaspoons salt
- 1 egg
- 1/2 cup ice water
Step 1) Put flour and cut in the Crisco in a bowl and blend until it resembles bread crumbs.
Step 2.) Stir in the sugar & the salt.
Step 3.) Combine the egg and ice cold water. Pour into the crust mixture and stir until combined.
Step 4.) Turn the crust mixture out onto a flour surface and gather it into a large ball. Knead until small pieces are incorporated in the ball.
Step 5.) Divide the ball into two equal pieces. Each ball should make two crusts. Unused dough should be stored in the refrigerator.
Step 6) Roll the dough out about 1/4 inch thick and then place it into a butter-greased deep dish pie pan. Shape the crust into place with your hands.
Step 7.) For a shiny crust, brush dough with one egg white. Refrigerate until filling is prepared.
Sweet Potato Filling Ingredients
- 2 cups sweet potatoes (2 medium sweet potatoes usually does it. I always have a bit extra left)
- 1/2 cup butter
- 1/2 cup white sugar
- 1/2 cup brown sugar
- 1/2 cup evaporated milk
- 2 eggs
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoons ginger
- 1 Tablespoon flour
- 1 teaspoon vanilla extract
Step 1.) Place sweet potatoes in a large pot and fill with water just until it covers them. Bring to a boil 45 -50 minutes or until they are fork tender. Check often.
Step 2.) Let sit until cool and then remove the skin. It should peel off very easily. But be careful, the potato may be hot.
Step 3.) Place peeled sweet potatoes in bowl and smash with a fork.
Step 4.) Use a mixer to blend the sweet potatoes chinks until smooth and creamy.
Step 5.) Add in butter and mix to combine.
Step 6.) Add in sugars, milk, eggs, nutmeg, cinnamon, ginger, vanilla and flour. Beat until mixture is smooth and creamy.
Step 7.) Pour into prepared pie crust and bake for 55- 60 minutes. Cool on a flat surface for 30 minutes. Refrigerate at leftovers.
Step 8.) Top with chopped pecans ( optional).
